  • 4 medium zucchini
  • 2 eggs
  • 1/4 cup grated Parmesan cheese
  • 1 lb ground turkey
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 bell pepper (chopped)
  • 1 yellow onion (chopped)
  • 4 cloves garlic (minced)
  • Olive oil
  • Italian seasoning

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grate the zucchini and drain excess moisture using a colander.
  3. In a mixing bowl, combine drained zucchini with eggs, Parmesan cheese, black pepper, onion powder, and one tablespoon of Italian seasoning. Press into a greased 9×13 baking pan and bake for 20 minutes.
  4. While the crust bakes, heat olive oil in a skillet over medium heat. Sauté bell pepper and onion until soft; add garlic and cook for another minute.
  5. Stir in ground turkey until browned; mix in marinara sauce and remaining Italian seasoning.
  6. Spread turkey mixture over baked crust, top with mozzarella cheese, then return to oven for an additional 20 minutes until bubbly.
